Oh What a mix!
BackgroundOne thing about Belizean food, the more you Mix the betta (better) it is! Tonight Tony and I enjoyed every bit of the food, and the poor dogs watched us the entire time waiting for maybe a lee fresh drop...sorry doggies no fresh drop for you tonight. Ok, on to the foooood!! Now I won't lie...this one takes a lot of time but mainly cause of the beans...other than that everything easy.
Rice & Black eye Beans with Pepper Steak & Curry Roasted Breadfruit...
Aright like I said The beans takes the longest and you kinda have to babysit it so don't make any plans that day.
Beans
2lbs Black eye Beans
4 garlic cloves (you can tone the garlic down if you want, I love garlic)
2 tbsp ground black pepper
salt to taste.
1 bunch Cilantro (culantro can be substituted)-chopped
That's all. Now you gotto soak the beans in water in your beans pot for about an hour. After the hour put the pot of beans on the fire and let it start cooking, this will take about 2-3 hours but if you add a small pinch of baking powder it helps it cook faster. You'll need to hang around the stove or at least check it often to make sure yu refil it with water til it's done. When your beans is soft and ready you'll add in the salt, black pepper, garlic (just crush it, take off the skin and throw it in whole), chopped cilantro/culantro. Let the beans soak in all the flavors for about 30 minutes.
Beans...before all the stuff has been added.
Ok so in the 30 mins your beans is cooking with the flavors you want to get your breadfruit going.
Curry Roasted Breadrfuit
1 medium breadfruit Firm
Bowl of water & salt
salt, black pepper & curry to taste.
olive oil
Cut off the top of the breadfruit, the part with the stem. Then slice the breadfruit in half, lengthway. Put one of the halves in the water to soak then cut out the core from the half you're working with. peel off the skin with a sharp sharp knife and then slice them into thick slices or into cubes. put into frying pan with a lil bit of olive oil, sprinkle the salt, black pepper, and curry lightly toss it it around in the frying pan and let it cook. you can add a bit of water if you want a more boiled taste than a oily taste. Let it roast in the pan for about 5-8 minutes.

...Yes, I did bite that one piece in the front.
Now, your beans done got a lee flavor by the end of all this. Now time for the Black eye Beans with Rice. or Rice with Black eye Beans...?
Rice & Black Eye Beans...
1 cup rice
1 cup cooked black eye beans
beans juice
1/4 cup coconut milk.
salt & black pepper (if needed, taste the beans juice to see if you'll need more.)
2 bay leaf
1 tsp oregano
Put in the rice in your pot, put in the beans then pour the beans juice from your pot of beans until it covers about an inch 1 inch) above the rice. if you need to add salt & pepper do so. Add in the coconut milk, bay leaf and oregano and let it cook. Keep a glass of water around just incase the rice need more water.

this will take about 20 mins or so...
And last but not least and definately my favorite...The MEAT!! We in Belize love we meat, whether it be Beef, Pork, chicken, fish or any other seafood...as long as it comes from an animal. Now I'm sure everyone has had Pepper Steak before, we love it here. We use either minute steak or round steak just as long as its a lean steak. This one is easy folks...
Pepper Steak
Steak cut of your choice...( I use Round Steak.)
Salt and pepper to taste...
1 med lime.
Get your steak, i trust by now u got it cut to the size you want it. then rub the steak with salt and lots of black pepper. Get the skillet nice and hot, put a drop of Olive Oil, about a teaspoon. Put steak in and squeeze a half of a lime on it. cook it turning it 6 times 1 minute on each side...this i notice leaves my steaks kinda juicey.

I love beans and I have never tried cilantro with them. Next time I make some, I'll make sure to give it a try. Great tip. Nice idea!
